Large handful of baby kale leaves

½ Avocado

Thumb-size chunk of ginger, peeled

10 blueberries - frozen

35g Oats (I use gluten-free)

1 Tbsp chia seeds

1 tsp Coconut oil

Juice of a small lemon

300ml Water approx.

Teaspoon Honey (optional)

This is a great recipe for a healthy start to your day. Particularly good for those starting a health kick this lent, but it’s one of my favourites year-round. It keeps you full all morning with the slow energy releasing oats and the lemon and ginger give an extra bounce to your step.


  1. Using a Nutribullet, or fast blender, put the kale leaves in first, then throw in the avocado, ginger, oats, chia seeds, coconut oil and pour in the lemon juice.
  2. Fill with water to the ‘max’ mark, or add approximately 300ml water, you may want to add a bit more depending on the consistency you like.
  3. Blitz for a minute or two.
  4. Drink at once, or bring in a flask to enjoy on your commute or at your desk.
